Hi, I’m Vanny, full-time student in Sydney and is in a VERY serious relationship with food since I arrived into this world many many MANY years ago. Whether I am at a birthday party, dinner table or just Netflix and chill with my cat, I am always the first to say “I am hungry” and the first to say “What’s next on the menu?” after dessert.
Besides my obsessive passion for food I love photography, Zumba and travelling.

 

VANNY’S COOKING STYLE:

Vanny: I never realised how much fun I can have in the kitchen until I made my first carbonara. I felt like a masterchef in my very own kitchen and to my surprise it was edible. Since then I try to challenge myself by leveling it up and baking cakes at night just in time for midnight snacks. It’s also a great way to bond with family and work as a team to create a fantastic meal together.  

Here’s a rundown on the cooking style I like to use and also what I think I’m better at making.

Asian food- It’s in my blood and I do love it. Homemade pineapple fried rice and san choy bau. I love cooking, eating, and feeding friends this stuff because it’s so easy to make.

Salads- It’s so difficult to please the healthy judges but I enjoy taking a few different ingredients from different cuisines and mixing them together. So far no one has complained my Mexican macaroni cheese salad.

Desserts- It’s funny. I’m always being accused of eating the last slice of cake and I have no shame of that. I try to plan something lighter if I had a heavy meal during lunch and dinner.

 

VANNY’S FAVORITE RESTAURANTS IN SYDNEY:

Vanny: There are plenty of restaurants that go in my favourite list, but if I really had to choose my top three then brunch I’d stop by at Cuckoo Callay because who wouldn’t go cuckoo for their No More #Hashtags.
For dinner I’d swim to Masuya Japanese restaurant for their fresh sushi and their Sapporo hot pot, it’s a must order.
And finally for dessert I’d treat myself with some waffles at The Choc Pot, it’s seriously addictive.

Vanny: It all started with the whole “popcorn chicken” phenomenon in 2014 and I just so happen to come across these little “nuggets” of chicken at a friend’s house, who is an amatuer cook in the kitchen and managed to successfully win my tastebuds with these.
Long story short it is worth sharing for those who cannot cook and who LOVE fried foods.

VANNY’S COOKING TIP FOR THIS POP CORN CHICKEN RECIPE:

Vanny: For this recipe, the most important kitchen staple is empty bowls, so that you can separate all the ingredients before cooking. You save a lot of time with having the ingredients in front of you ready to work their magic instead of having to fumble with opening lids and measuring everything.

Another tip is paper towels FTW because they soak up all that oil. Have a little patience (or another beer or two) while you wait for the chicken to rest. Plan for about 1 minute; the crust may feel cool to the touch, but eating it too soon will result in piping hot meat.

Homemade Popcorn recipe Nessy Eater blog

Popcorn chicken by Vanny

This homemade KFC recipe has only five ingredients with some kickin’ spices: chicken breasts, chicken powder, potato starch, flour and cayenne pepper

Ingredients
Flour mixture
Deep fryer
Batter
Chicken
Servings: people
Instructions
  1. Before starting, prepare 3-4 cups vegetable oil into a wok or small skillet and place on medium heat.
  2. Then mix 1 1/2 cups plain flour , 1/2 tsp potato starch and 1/4 cup water in small mixing bowl.
  3. Add 1 1/2 tsp chicken powder, stir.
  4. Add 3 tsp cayenne pepper, stir.
  5. Double check the consistency of the flour mixture, not too runny, not too thick. ( Too thick= Add water, Too runny= Add flour).
  6. Dunk the chicken pieces into the flour mixture (If time isn’t an issue, piece by piece) , fully coating the chicken.
  7. Dip pieces of chicken into 1 1/2 cup plain flour batch, being sure they are fully covered.
  8. To test if the oil is ready simply fry a few pieces of chicken into the oil. If it sizzles, it’s ready! Now, slowly place the chicken into the oil. After 4-5 minutes depending on heat flip pieces over. Pieces of chicken should be ready when it turns golden brown. (Best to take one out and cut it in half to see if the meat is fully cooked).
  9. Once the chicken is ready, scoop out the chicken pieces and make sure oil is drained as much as possible. Use 2 paper towels or more to excess the oil so the popcorn chicken is super duper crunchy.
  10. Homemade popcorn chicken is READY TO EAT.

Tastes just like KFC popcorn chicken with the secret ingredient: cayenne pepper and chicken powder

Smaller pieces of chicken = crispier and crunchier

For awesome results use deep fryer

Use paper towels/ tempura sheets to excess oil
